I made this last week and it was SO\u00a0easy!!!<\/p>\n<p><span style=\"color: #000000;\"><strong><img loading=\"lazy\" class=\"alignright wp-image-4562\" src=\"http:\/\/healthjigsaw.com\/blog\/wp-content\/uploads\/2016\/07\/chicken-vegetable-quinoa.jpg\" alt=\"chicken-vegetable-quinoa\" width=\"400\" height=\"400\" srcset=\"https:\/\/healthjigsaw.com\/blog\/wp-content\/uploads\/2016\/07\/chicken-vegetable-quinoa.jpg 800w, https:\/\/healthjigsaw.com\/blog\/wp-content\/uploads\/2016\/07\/chicken-vegetable-quinoa-150x150.jpg 150w, https:\/\/healthjigsaw.com\/blog\/wp-content\/uploads\/2016\/07\/chicken-vegetable-quinoa-300x300.jpg 300w, https:\/\/healthjigsaw.com\/blog\/wp-content\/uploads\/2016\/07\/chicken-vegetable-quinoa-160x160.jpg 160w, https:\/\/healthjigsaw.com\/blog\/wp-content\/uploads\/2016\/07\/chicken-vegetable-quinoa-320x320.jpg 320w\" sizes=\"(max-width: 400px) 100vw, 400px\" \/>Ingredients<\/strong><\/span><\/p>\n<ul>\n<li>1 tbsp extra virgin olive oil<\/li>\n<li>1 large onion, finely chopped<\/li>\n<li>3 cloves of garlic, minced<\/li>\n<li>1 red capsicum, finely chopped<\/li>\n<li>800g chicken breast fillets, cut into roughly 2cm cubes<\/li>\n<li>salt and\u00a0ground black pepper<\/li>\n<li>1 cup quinoa, uncooked<\/li>\n<li>1 cup\u00a0chicken stock<\/li>\n<li>2 bay leaves<\/li>\n<li>2 medium zucchini, cut into small cubes<\/li>\n<li>1 bunch broccoli, cut into small pieces<\/li>\n<li>250g grape tomatoes, halved<\/li>\n<li>1 bunch parsley, finely chopped<\/li>\n<\/ul>\n<p><strong><span style=\"color: #000000;\">Method<\/span><\/strong><\/p>\n<ol>\n<li>Preheat a large deep skillet on medium-high heat. Add olive oil, onion, garlic and cook for 4 minutes, stirring frequently.<\/li>\n<li>Add capsicum and saute for 3 more minutes, stirring frequently.<\/li>\n<li>Add chicken and saute for 5 minutes, stirring occasionally.<\/li>\n<li>Add salt and pepper, quinoa, stock, bay leaves and stir. Bring to a boil, cover with a lid, reduce heat to low-medium and cook for 12 minutes.<\/li>\n<li>Add zucchini and broccoli and stir. Cover with a lid and cook on low-medium for 15 more minutes.<\/li>\n<li>Add grape tomatoes and parsley, stir and remove from heat. Serve hot.<\/li>\n<\/ol>\n<p>Preparation time: 15 minutes. Cooking time: 40 minutes.
