Leftover burgers can be used in a salad the next day.<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>500g fresh raw skinless and boneless salmon fillet, chopped<br \/>\n1 small bunch chopped parsley<br \/>\n2 spring onions, sliced<br \/>\nZest and juice of 1 lemon<br \/>\nGood grind of pepper and a little sea salt<br \/>\n1 egg<br \/>\n50g almond meal to coat (optional)<\/p>\n<ol>\n<li>Combine the salmon, spring onion, parsley, lemon zest and juice, egg and a little salt and pepper into a food processor. Process until just combined.<\/li>\n<li>Remove and shape into 8 burgers.<\/li>\n<li>Coat them lightly in almond meal if using, and rest in the fridge for 15 minutes to help them firm up.<\/li>\n<li>Cook the burgers in a pan over a low to medium heat with a splash of olive oil until crisp, golden and cooked through.<\/li>\n<li>Serve with your choice of steamed vegetables, roasted sweet potato or leafy greens.<\/li>\n<\/ol>\n<p><em>Preparation and resting time: 30 minutes<\/em><br \/>\n<em>Cooking time: 10 minutes<\/em><\/p>\n<p><strong>Nutrition per serve (1 burger)<\/strong><\/p>\n<p>Protein: 27.7g<br \/>\nCarbohydrate: 0.7g<br \/>\nTotal fat: 15.7g<br \/>\nSaturated fat: 2.4g<br \/>\nFibre: 1.3g<br \/>\nKilojoules: 1070<br \/>\nCalories: 255<\/p>\n<h5><span style=\"color: #000000;\">Source: Australian Fitness Network Magazine<\/span><\/h5>\n","protected":false},"excerpt":{"rendered":"<p>Salmon is a great source of protein and omega 3 fatty acids.
